Cinnamon is a evergreen tree and the cinnamon sticks are from inner bark of this tree. The inner bark of the mature cinnamon shoots are peel off and dried first in the sun and thereafter in the shade. Then they are joined together with overlapping tubes, the hollow of which has been filled with smaller pieces of Cinnamon peels.
