For preparing ginger bits the small sized ginger roots are selected from fine quality ginger rizhomes and process involved is same as dried ginger.. Pieces of ginger smaller than 15 mm can be graded with the marking Garbled bleached Ginger Pieces. Matured ginger roots are harvested, cleaned, sorted, pealed and dried to obtain ginger bits, It may be marked “Ungarbled bleached Calicut” (BUGK) or “Ungarbled bleached Cochin” (BUGC) depending upon its place of origin.
