Dried ginger is the raw material to make ginger powder and also for ginger oil and oleoresin extraction. It is obtained by drying of fully matured rhizomes, harvested at an age of 8 to 9 month. At this age the rhizomes have fully developed flavor, aroma and pungency. When preparing dried ginger it is most important to choose variety of rhizomes with a strong flavor and aroma. It may be bleached with lime Medium sized rhizome are more appropriate to choose for drying. Cleaned and sorted gingers are peeled and dried mostly in sun.
