For preparing Turmeric bits The small sized turmeric roots are slected from fine quality Turmeric Roots and process involved is same as dried turmeric fingers. The harvested turmeric rhizomes have to be cured. This involves washing and sweating the roots for one day. Then they are boiled to soften them and remove the raw odour. The cooked fingers or bulbs are dried until they have a final moisture content of 5-10%. After drying the rhizomes are polished to remove the rough surface. The rhizomes are sprinkled with a solution of ground turmeric in water during the final polishing, to give the rhizomes a good colour.Its overall size is smaller compaire with other grades.
